An underrated superfood, the pole bean, or pigeon pea, is an excellent source of amino acids, fiber, and various minerals such as thiamin, folate, iron, magnesium, manganese, potassium, and zinc. Also included in the group of pulses referred to as dal in Indian cooking, pigeon pea can vary between cream, gray, purple, black, or spotted in color.
